Celebrating a Special Thanksgiving with Mascarpone Mashed Potatoes

Cooler weather has arrived, along with the season for special family gatherings. Although holiday get-togethers may be different this year, you can still spread love with a warm and comforting holiday classic. More than ever, tradition is key and that’s why we have chosen to share a timeless recipe for mascarpone mashed potatoes. Like a warm hug from your grandmother, mashed potatoes have been a Thanksgiving staple for decades. The creamy addition of mascarpone cheese elevates this crowd-pleasing favorite.

Remember that presentation is everything, and nothing says traditional Thanksgiving like ceramic bakeware with the timeless Autumn sentiments “grateful” and “thankful.” This year, those hand lettered sentiments unquestionably ring true, and these heirloom pieces will surely be enjoyed for generations to come.  We are all truly blessed to be able to celebrate the holiday with the ones we love, whether that be with your immediate family in your home or with loved ones far from home via a special virtual gathering. Ingredients:

4½ pounds russet potatoes, peeled and cut into quarters

¾ cup mascarpone cheese, softened

1 egg yolk

1 cup milk

Sea salt and black pepper, to taste

Cayenne pepper and paprika, to taste

1 clove garlic, minced

1 cup butter, cut into pieces

Fresh rosemary for garnish

 

Directions:

Step 1: Preheat the oven to 425 degrees F.

 

Step 2: Place quartered potato pieces inside a pot of salted water and bring to a rolling boil. Once the water has reached a boil, reduce heat to medium-low and cook until tender enough to easily pierce with a knife. Drain thoroughly.

 

Step 3: Whisk the mascarpone cheese in a mixing bowl until all lumps are gone. Stir the milk, egg yolk, sea salt, black pepper, cayenne pepper, and paprika until smooth.

 

Step 4: Transfer the cooked potatoes to another large mixing bowl and add the butter. Season with sea salt and black pepper. With a potato masher, mash the potatoes until they reach a fluffy consistency.

 

Step 5: Add the mascarpone mixture to the potatoes and whisk together.

 

Step 6: Gently spread the potatoes into a ceramic baking dish and smooth the top with a spatula.

 

Step 7: Bake until the potatoes are heated through and the top is golden brown, about 20 minutes. Garnish with a sprig of fresh rosemary.
